This position is responsible for the effective control over food and beverage inventory, cost management, wastages, and pilferage. He or she works towards achieving targeted cost of food and beverage without compromising the established quality or quantity of portions.
Analyze and monitor the costs of food and beverage items, ensuring that they align with budgetary constraints and financial goals.
- Regularly review pricing strategies and assess the impact on profit margins.
Develop and implement effective inventory management procedures to control food and beverage stock levels.- Calculate the cost of each menu item and beverage, factoring in ingredients, preparation labor, and overhead costs.
Collaborate with chefs and kitchen staff to update and maintain accurate recipe costs.
- Assist in the preparation of annual budgets for the food and beverage department.
Monitor budget performance and provide regular reports to management.- Evaluate supplier performance and explore cost-saving opportunities.
Implement measures to minimize food and beverage waste and spoilage.
- Analyze patterns of waste and recommend strategies for improvement.
Collaborate with chefs and management to analyze menu performance.- Recommend adjustments to the menu to optimize profitability and cost-efficiency.
Ensure compliance with accounting standards and internal controls related to food and beverage costs.
- Generate regular reports detailing cost variances and key performance indicators.
Conduct training sessions for kitchen and service staff on cost control measures.- Leverage technology, such as inventory management systems and POS (Point of Sale) systems, to enhance accuracy and efficiency in cost control processes.
Identify areas for improvement in cost control processes and implement proactive solutions.
- Qualifications / Requirements
Bachelor's degree in accounting, Finance, Hospitality Management, or a related field.
- Proven experience in F&B cost control or a similar role within the food & beverages industry.
Strong analytical and numerical skills.- Familiarity with inventory management systems and financial software.
Knowledge of food and beverage regulations and industry standards.
- Excellent communication and negotiation skills.
Ability to work under pressure in a fast-paced environment.
