Work closely with Chef de Partie- Able to run a section of the kitchen on his/her own while ensuring that it runs according to performance standards
Maintains a high level of food quality standards, whilst following Menus, Recipe formats, and directions as outlined
- Following menus, recipe formats, and directions
Preparing and cooking food- Assisting in all activities in the kitchen
Enforce health and safety standards in the kitchen
- Oversees preparation, cooking and presentation for plates
Provide direction to the kitchen helpers, including commis, cooks, kitchen attendants and stewards- Ensure that all dishes from that section are prepared consistently and accordingly to standard recipes
To ensure minimum kitchen wastage
- To ensure knowledge of the product is maintained and communicated to all relevant personnel
To be responsible for completing mis en place- To learn and record skills and recipes from other members of the department
To monitor stock movement and be responsible for ordering on your section
- To be flexible and willing to help the restaurant kitchen at busy times if required
